11 Fruit Pies to Showcase Sweet Summer Produce Before It’s Gone

Try these fruit pie recipes to show off your favorite summer produce before peaches and berries make way for apples and pears.

No dessert seems to so perfectly represent summer like pie, with its crisp, flaky crust and sweet innards. From classic cherry and peach to smooth delights like banana cream, there’s a perfect pie for every fruit fan.

And they’re not all double-crust, lattice-topped affairs; we have several easy options with simple press-in pie crusts below—and you can turn any pie into a crumble-topped creation (similar to Dutch apple pie) if you don’t want to fuss with a top crust (let alone decoration).

While the airier pies below can stand alone, any one that’s served warm will benefit from a scoop of ice cream or a cloud of fresh whipped cream.

There will be plenty of time for apple pie and pumpkin and pecan later. For now, make these summer fruit pies while the season’s produce is at its peak.

Strawberry Rhubarb Pie with Sour Cream Crust

Rhubarb is one of spring’s early risers; if you really love the tart flavor of the pink stalk, try our Latticed Rhubarb Pie recipe. But if you prefer it in smaller doses with a sweet accompaniment to take the edge off, get our Strawberry Rhubarb Pie recipe. The tender sour cream crust is a bit richer and stands up to handling better than an all-butter version.

Peach Melba Pie

Never has a hot mess looked so good. This blend of raspberries and ripe peaches is scented with vanilla bean and brown sugar and baked in a perfectly crumbly crust with an easy oatmeal–brown sugar streusel topping. Get our Peach Melba Pie recipe. (Our Peach Pie with Pecan Streusel is also great; in either case, feel free to use nectarines in place of peaches.)

Mixed Berry and Anise Pie

A berry patch in pie form, this dessert combines blueberries, blackberries, and raspberries in a sanding sugar-speckled crust. A whisper of anise extract helps emphasize the floral flavors of the fruit and balances the sweet-tart filling (sort of like adding a dash of bitters to a cocktail). Get our Mixed Berry recipe.

Apricot Meringue Pie

Sunny apricots are a wonderful stand-in for the usual lemon in a sky-high meringue pie. Since you’ll have to spend some extra effort on the lofty, toasty topping, we made the bottom layer easy: a press-in crust with ground almonds that complement the flavor of the fresh apricot filling. Get our Apricot Meringue Pie recipe.

Rustic Blueberry Tart

OK, this is technically not a pie, but tarts are firmly in the same family—and this is such a looker, can you really quibble? The low-key dough is easy enough for beginners, and the gorgeous blueberries are simply tossed with sugar and lemon zest (plus a bit of cornstarch to help the juices thicken up). Get our Rustic Blueberry Tart recipe.

Cherry Pie

An iconic lattice-topped cherry pie is often made with sour cherries, but they have such a fleeting season, we made this version with the more widely available sweet cherries. That way you can enjoy it all summer long. An extra dose of lemon juice adds back a bit of tartness. Get our Cherry Pie recipe.

Blackberry Chiffon Pie

For those who just can’t develop a taste for warm or chunky fruit pies, this super-smooth blackberry chiffon is a revelatory way to enjoy a summer fruit dessert. Fresh berries are cooked into a syrup that’s made fluffy with whipped egg whites and stabilized with gelatin for a light and creamy filling. It’s cradled in an easy vanilla wafer crust. The top layer of soft whipped cream is lovely, but this one doesn’t keep so well—all the excuse you need for one more slice. Get our Blackberry Chiffon Pie recipe.

Chocolate Raspberry Cream Pie

Another creamy stunner of a summer dessert, this one features a simple press-in crust too (made from graham crackers and brushed with a layer of chocolate ganache), and fresh fruit in the form of a raspberry-whipped cream filling and whole raspberries on top. Plus a bittersweet chocolate drizzle for good measure. Get our Chocolate Raspberry Cream Pie recipe.

Banana Pudding Pie

While bananas aren’t a summer fruit, per se, banana pudding is definitely one of the best summer desserts, period. So a Banana Pudding Pie recipe is the perfect end to any BBQ. But why not play up the tropical flavor profile of the fruit with the addition of toasted coconut? Get our Banana Coconut Cream Pie recipe if you want a little island flair.

Key Lime Pie

Key limes, like many other fruits, can be found all year long these days, but their peak season is in summer (June through August, to be exact). Their most beloved expression is probably in this easy-peasy pie, where the hardest part is juicing all those little limes. But it’s totally worth it when you take the first bite. Get our Key Lime Pie recipe.

Southern Tomato Pie

This seems like a total curve ball, but tomatoes are in fact a fruit, and are certainly one of summer’s most delicious treats. While we never get tired of eating heirloom tomatoes simply sliced (or stuffed), they’re also great in a cheesy, savory pie. Pair it with one of the other blue ribbon contenders above and you can have an entire meal of pie! Get our Southern Tomato Pie recipe.
